Healthy Holiday Side Dishes

We are all attracted to those traditional holiday treats that are so prevalent this time of year. Unfortunately, many of the Thanksgiving staples we love are high in calories, fat and sodium. This year, join with your family and make some healthier side dishes. If you are not eating at home, be sure to watch your portions and indulge in moderation. A great motto to teach children is to “take what you will eat, and eat what you take”.

Holiday favorites, squash and sweet potatoes, are something that is often full of brown sugar, butter and other not-so-healthy ingredients. But the truth is that they are packed full of important vitamins, minerals and fiber. Below are just a few ideas to help integrate these traditional holiday foods into your meal in a healthier way.

Sweet Potatoes with Apple Butter

Although apple butter is relatively high in sugar, it is still a much better option than brown sugar and marshmallows.

Ingredients:

4 lbs sweet potatoes

6 Tbsp unsalted butter

½ cup apple butter

Instructions:

  1. Peel the sweet potatoes, mash and combine with butter and apple butter.

Roasted Butternut Squash

Ingredients:

1 medium butternut squash

2 Tbsp olive oil

½ tsp garlic powder

½ tsp salt

½ tsp pepper

Wild Rice and Squash Salad

Ingredients:

1 cup uncooked wild rice

1 medium winter squash, cubed

1 package fresh spinach

Dressing:

6 Tbsp olive oil

2 Tbsp red wine OR balsamic vinegar

½ cup blueberries (optional)
